OPERATIONS

All our fish is taken from Mounts Bay.

When the fish is taken from the sea it is dropped straight in to slush ice with almost no contact with air temperature; it’s a matter of seconds for the fish to go from sea temperature to slush ice temperature, a really quick process.

The fish is landed within an hour and there is absolute minimum handling; the fish stays in the slushed ice until its processed or auctioned the next day.
